Cafe Sauvage is an intimate sixty-seat bistro offering open-air garden courtyard seating and indoor air-conditioned dining rooms lined with the Chef's vibrant collection of original lithographs and watercolors.

First opened in October 1989, the restaurant is on the site of what was known as the old Organ Grinder. And although everyone agreed that it was one of the very best locations on Lahaina's Front St. -- upstairs and oceanfront with nothing but a low seawall to its left - it didn't offer what you'd call a "dining experience". It did have quite a colorful history -- its lease was once lost in a poker game -- but come the late `80s, a colorful history did not a successful food service establishment make.
